You would have to use some oil or add an egg for moisture. Minus the essential oil, it leaves them rubbery. Even with only one 1 tablespoon of coconut essential oil, I found these a little rubbery. I have a formula for sugars free muffins using a sugars free cake combine in support of pumpkin puree and they are great, so probably more banana??
A great get of mine with this formula is that I am diabetic and purchased Hershey’s Sugars free Chocolate chips…..The best chocolate chips I have ever had regular or sugar free, very deep and decadant chocolate flavor!!!
